The friendly staff, including Dung and Ben, are always considerate, even helping carry food to the car.

They take their pho very seriously at this Hillsboro spot, which is why they’ve retained their title as one of Portland’s Most Important Vietnamese Restaurants (PMIVR, for anyone who cares). The flank steak pho arrives as a very good bowl, and the basic beef pho has become the stuff of westside noodle legend. And while the pho is the main event here, you definitely need to get involved with the other dishes, especially the insanely good pork bún and their excellent fresh rolls.
Pho Viet has taken their dining operations indoors, with a newer seating area filled with simple tables, bright lighting, and lots of space. Service can be slightly slow, but the friendly staff makes the visit enjoyable. Most bowls run around $12–$16, making it a great value for the generous meat portions.
